Carrot Cake Recipe

Upon request here's my carrot cake recipe :))

4 eggs
300 gr flour
1 pk. baking powder
250 gr butter
250 gr sugar
1 pk. vanilla powder
3 big carrots (grated)
1 teaspoon baking soda
little bit of salt (1/4 tsp)
1 1/2 tsp ground cinnamon
100 gr ground walnuts (or whole walnuts)
100 ml apple juice (very important!)

For the cream cheese:

60 gr butter
250 gr Cream cheese, softened (it's a Philadelphia-like cheese specially for cakes)
250 gr powdered sugar
1 tsp vanilla powder

**Thoroughly grease a round cake pan, mix eggs, butter, sugar and vanilla a separate bowl mix flour and baking powder and slowly add to first mixture...then start adding salt, baking soda, carrots, cinnamon, walnuts and lastly apple juice, mix for 5 min. and pour into cake pan.
Bake at 175 degrees for about 45 min (depends on oven).
For the cream cheese mix all ingredients, put into fridge for 1-2 hrs and cover the cake when cake has cooled and back into fridge. (You can also cut the cake into half with and put cream inside but I usually don't bother and just cover it with cream)
